Rola Wala – Trinity Kitchen, Leeds
Background: Epic street food flavours discovered on Kolkata backstreets, Bombay beaches, and Keralan waterways led Aussie Mark Wright on a journey to bring the incredible experience of Indian street food back to the UK. Following years of hard work and effort in building a presence through the incredibly vibrant London Street Food scene, Mark decided to take up residency at Trinity Kitchen Leeds calling upon Triton Interiors to help develop his first ‘bricks & mortar’ site.
The Development:
Trinity Kitchen, based in the recently opened Trinity Leeds Shopping Centre proved the perfect location for Rola Wala to set up their first venture but with an already well established food hall in full operation the project presented certain challenges to the Triton team with extensive alterations required to the existing kitchen and server areas.
Working within the public Food Hall, almost all works were completed out of hours to prevent disturbance to other Food operators. This was achieved whilst still maintaining the tight schedule. As you would expect with such a new venture the design changed almost daily and the Triton team needed to work closely and diligently with Rola Wala’s chosen design team to keep track of change and ensure the clients tight budgetary constraints were not exceeded, all whilst making sure the unit opened on time and to the quality expected.
